
TBU Refectory Wins Gold at International Championship

June 2024The third annual International University Canteen Championship was held for the first time this year at the Food Processing Training Centre of the Faculty of Agrobiology, Food and Natural Resources at the Czech University of Life Sciences in Prague. Five teams competed in the event. Representing the host institution was the canteen of the Czech University of Life Sciences in Prague – “Suchdoláci”, facing off against Mensa Matrix – Studentenwerk Dresden, Tomas Bata University in Zlín, the Technical University of Ostrava, and the Secondary Technical School in Prosek – Primirest. This year, the gold medal goes to Zlín.
The competition challenged teams to prepare a full two-course menu, consisting of either a starter and a main course or a main course and a dessert. Mandatory ingredients included pork, potatoes, honey and yoghurt. The main course was required to feature one type of sauce or dip and two different side dishes with varying textures. Entries were judged based on creativity and complexity of preparation, flavour pairing across the menu, presentation of individual courses, use of seasonal ingredients, efficient processing, waste minimisation, and realistic cost calculations. The theme of this year’s competition was “Our Countryside”.
“Our menu featured pork crackling flatbreads, onion and bacon marmalade, pulled pork with smoked paprika, garlic dip, straw potatoes and roasted potatoes with bryndza cheese. For dessert, we served a walnut roulade filled with traditional ‘frgál’ sweet pastry filling,” said Petr Sedlář, head chef of the TBU Refectory.
The TBU team placed first and took home the gold medal. Second place went to the Secondary Technical School in Prosek – Primirest team, and third place was awarded to the team from Technical University of Ostrava. The audience prize was won by the host canteen from Czech University of Life Sciences in Prague.
